Broccoli Scrambled Eggs
Makes 1 serving. You will need a food processor for this dish.
Here’s a delicious and nutritious take on typical scrambled eggs. Only 2 ingredients and a food processor are needed to infuse this protein rich dish with some much needed fiber and vitamins. Broccoli gives this dish a nutty taste and slightly crunchy texture.
1/3 of Broccoli head
Salt, pepper, chili powder to taste
1. Cut the broccoli into pieces and put them into a food processor
2. Pulse the blender for a few seconds to get broccoli into tiny pieces
3. Transfer broccoli onto a pan and sauté slightly over medium heat for a few minutes adding a bit of salt, pepper, chili powder to taste. If you want you can also add a drop of olive oil. Stir it while it cooks
4. In a separate bowl, whisk the eggs until they are liquid and pour them over the broccoli in the pan. Using a spatula, cook it like you would normal scrambled eggs
