Broccoli Scrambled Eggs

Makes 1 serving. You will need a food processor for this dish.

Here’s a delicious and nutritious take on typical scrambled eggs. Only 2 ingredients and a food processor are needed to infuse this protein rich dish with some much needed fiber and vitamins.  Broccoli gives this dish a nutty taste and slightly crunchy texture.

Ingredients

2 Eggs

1/3 of Broccoli head

Salt, pepper, chili powder to taste

 

 

 

 

Directions

1. Cut the broccoli into pieces and put them into a food processor

 

 

 

 

 

 

 

 

 

hhblife-broccoli-blended2. Pulse the blender for a few seconds to get broccoli into tiny pieces

 

 

 

 

 

 

hhblife-broccoli-saute3.  Transfer broccoli onto a pan and sauté slightly over medium heat for a few minutes adding a bit of salt, pepper, chili powder to taste. If you want you can also add a drop of olive oil. Stir it while it cooks

 

 

 

 

 

hhblife-broccoli-pouregg4.  In a separate bowl, whisk the eggs until they are liquid and pour them over the broccoli in the pan. Using a spatula, cook it like you would normal scrambled eggs

 

 

 

 

 

hhblife-broccoli-scrambled-eggs5.  When eggs are cooked through, serve on a plate alongside some fresh veggie slices like cucumbers, bell peppers and tomatoes
