Cabbage-Carrot Coleslaw with Green Peas

(Makes 3 servings)

1/2 cabbage, finely chopped
1 large carrot, grated
Green peas (canned or frozen)
Dill, finely chopped
Olive oil – 2 tablespoons
Salt and pepper, to taste
Vinegar – 1 tbsp (optional)



1. In a large bowl, toss together the cabbage, carrot, half a can of green peas (if using frozen, thaw them out first), and dill

2. Add 2 tablespoons of olive oil, vinegar (optional), salt and freshly ground pepper (to taste) and mix everything well

3. Best when served immediately
