Spinach-Tomato Salad with Bell Pepper and Pumpkin Seeds

(Makes 2 servings)
1/2 pack of baby spinach
1 large tomato, chopped
1/2 bell pepper (red or yellow), chopped
Handful of pumpkin seeds
Olive oil – 2 tablespoons
Balsamic vinegar – 2 teaspoons



1. Toss all the ingredients into a large bowl, add the olive oil, and sprinkle with balsamic vinegar right before serving
