Can you please give me an idea of a small and simple breakfast for my busy lifestyle?

One of my absolute favorite and easy breakfasts is homemade Bircher Muesli. It’s so nutritious, but easy to make. At night, before you go to bed, take 2 cups of rolled oats and soak them in 2 cups of water. The oats should absorb the water and not be too slushy.

Cover it up and put in the refrigerator overnight. In the morning, take a few tablespoons of yoghurt and mix it with the oats. The consistency should be thick. Using a blender, add a handful of nuts (walnuts or hazelnuts) and flaxseeds, and grind them. Mix it into your oats.

Grate an apple (I like green the best) with the skin on and mix it into the oats as well. Lastly, as an option, you can cut up some dried fruit or drop in a handful of raisins. If the consistency is too thick, you can add milk of any variety (soy, oat, almond or regular).

If you are on the go and need something super fast but nutritious at the same time, try a fruit smoothie. In a blender add 1 banana, 1 apple, handful of sliced/chopped almonds, half a cup of water, half a cup of soy or almond milk (can also be oat, rice or regular milk). Add just a dash of cinnamon and blend until smooth. Pour into a portable container and drink it on your way to work.
